The tried and true approach is to go behind the scenes and tour one of the cognac houses, or <em>maisons de Cognac. <\/em>Most of the big houses are centered in the <a rel=\"noreferrer noopener\" aria-label=\"Charente region (opens in a new tab)\" href=\"https:\/\/en.wikipedia.org\/wiki\/Charente\" target=\"_blank\">Charente region<\/a> of France; naturally enough, many are in the town of Cognac proper. <a rel=\"noreferrer noopener\" aria-label=\"Hennesey (opens in a new tab)\" href=\"https:\/\/www.cognac-expert.com\/cognac-brands\/hennessy-cognac\" target=\"_blank\">Hennesey<\/a>. <a rel=\"noreferrer noopener\" aria-label=\"Martell (opens in a new tab)\" href=\"https:\/\/www.cognac-expert.com\/cognac-brands\/martell-cognac\" target=\"_blank\">Martell<\/a>. <a rel=\"noreferrer noopener\" aria-label=\"Remy Martin (opens in a new tab)\" href=\"https:\/\/www.cognac-expert.com\/cognac-brands\/remy-martin-cognac\" target=\"_blank\">Remy Martin<\/a>. <a rel=\"noreferrer noopener\" aria-label=\"Camus (opens in a new tab)\" href=\"https:\/\/www.cognac-expert.com\/cognac-brands\/camus-cognac\" target=\"_blank\">Camus<\/a>. <a rel=\"noreferrer noopener\" aria-label=\"Courvoisier (opens in a new tab)\" href=\"https:\/\/www.cognac-expert.com\/cognac-brands\/courvoisier-cognac\" target=\"_blank\">Courvoisier<\/a> is in nearby Jarnac. All start with the same basic ingredient: the colorless, tasteless alcohol \u2014 <em>eau de vie \u2014<\/em>that is distilled from Champagne grapes. <\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/lelandhale.com\/images\/cognac-grapes-1.png\" alt=\"scenes\"\/><\/figure>\n\n\n\n<p>Many years ago, I visited the Hennesey cognac house. I remember the impressive stacks of product. The French oak barrels, the gentle aging process, the &#8220;angel&#8217;s share.&#8221; It was worth another round.<em><a rel=\"noreferrer noopener\" aria-label=\"La part des anges (opens in a new tab)\" href=\"https:\/\/www.pediacognac.com\/en\/le-vieillissementle-vieillissementle-vieillissement\/der-anteil-de-engelthe-angelssharela-part-des-anges\/\" target=\"_blank\"><\/a><\/em><\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><em><a rel=\"noreferrer noopener\" href=\"https:\/\/www.pediacognac.com\/en\/le-vieillissementle-vieillissementle-vieillissement\/der-anteil-de-engelthe-angelssharela-part-des-anges\/\" target=\"_blank\">La part des anges<\/a><\/em> is the portion of cognac that evaporates during the maturation process, leaving a distinctive aroma and staining the limestone walls black with spores that thrive on this essense. <\/p><\/blockquote>\n\n\n\n<p>As luck would have it, Lorrie booked us into a small B&amp;B (&#8220;gite&#8221;) in <a rel=\"noreferrer noopener\" aria-label=\"Celles (opens in a new tab)\" href=\"https:\/\/en.wikipedia.org\/wiki\/Celles,_Charente-Maritime\" target=\"_blank\">Celles<\/a>, just outside <a rel=\"noreferrer noopener\" aria-label=\"Cognac (opens in a new tab)\" href=\"https:\/\/en.wikipedia.org\/wiki\/Cognac,_France\" target=\"_blank\">Cognac<\/a>. Our host, June Smallwood, happened to know a local cognac distiller. <a href=\"https:\/\/www.sudouest.fr\/2016\/08\/04\/un-cognac-qui-se-couvre-d-or-2456433-1679.php\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\"Michel Drouet (opens in a new tab)\">Michel Drouet<\/a> is a third generation cognac master, with vineyards bordering the B&amp;B. &#8220;Yes,&#8221; June confirmed, &#8220;we can visit him today.&#8221;<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/lelandhale.com\/images\/drouet-collage-cognac-ars.png\" alt=\"scenes\"\/><figcaption><strong>Michel Drouet&#8217;s Cognac<\/strong>. An intense education. Using a combination of French, English and Spanish &#8212; it&#8217;s common for European conversations to span multiple languages &#8212; June and Michel took us <a href=\"https:\/\/cognacetapes.com\/en\/fiche\/4360\/\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\"behind the scenes (opens in a new tab)\">behind the scenes<\/a> in Cognac. Or, more accurately, <em>deep<\/em> behind the scenes. <\/p>\n\n\n\n<p><strong>Lesson #1<\/strong>: The big cognac houses are not distillers, they&#8217;re blenders who buy distilled and aged <em>eau de vie<\/em> from small houses like Michel&#8217;s. The small distillers are on four year contracts with the big houses; <em>they<\/em> do the initial distilling and aging. After four years, they deliver their product to the big houses. <\/p>\n\n\n\n<p><strong>Lesson #2<\/strong>: Job number one for the big cognac houses is consistency within their &#8220;brand&#8221; identity. Consistent sugar. Consistent color. Consistent taste. If the color is not &#8220;consistent,&#8221; they add caramel coloring. If the taste is not consistent, they&#8217;ll add sugar. <\/p>\n\n\n\n<p><strong>Lesson #3<\/strong>: The big houses are under no obligation to buy the <em>eau de vie<\/em> after the four year contract matures. Michel has <em>Courvoisier<\/em> inspect his barrels every six months. If they won&#8217;t take them, he wants to know early. He can make his own damn cognac.<\/p>\n\n\n\n<p><strong>Lesson #4<\/strong>: Michel is a gold-medal cognac distiller and blender. Like all producers, his cognac is double-distilled, as it must be. He has his own aging room. It is black with the &#8220;angel&#8217;s share.&#8221;<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/lelandhale.com\/images\/michel-drouet-cognac-barrels.png\" alt=\"scenes\"\/><figcaption><strong>Michel Drouet&#8217;s cognac aging room<\/strong>. Note the stray water bottle. <\/figcaption><\/figure>\n\n\n\n<p><strong>Lesson #5<\/strong>: The small houses make some incredible cognac. XO cognac, which must be aged at least ten years? Yep, Michel&#8217;s got it. Cognac that&#8217;s 35 years old? Yep, he&#8217;s got that too. It&#8217;s everything the big houses promise except&#8230; Artificial consistency and high prices. Michel&#8217;s cognac goes for one-third the price of the big houses. It tastes every bit as big and distinctive. And is, perhaps, more authentic.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/lelandhale.com\/images\/drouet-cognac-recent-blend.png\" alt=\"scenes\"\/><\/figure>\n\n\n\n<p><strong>Lesson #6<\/strong>: The locals don&#8217;t buy cognac from the big houses. They buy from small producers like Michel. So did we. This is <em><a rel=\"noreferrer noopener\" aria-label=\"la France profonde (opens in a new tab)\" href=\"https:\/\/en.wikipedia.org\/wiki\/France_profonde\" target=\"_blank\">la France profonde<\/a><\/em>.
